This predominantly flat region experiences well-defined seasons, resulting in simultaneous cherry ripening. Coffee from this area is renowned for its intense aromas, with notes of caramel and nuts, a medium body, and a long, lingering chocolate aftertaste.

Caramel, milk chocolate, and brown spices, medium body, low acidity, natural / sun-dried process Samba Reserve from Cofinet features natural processed coffees from the Carmo de Minas region in South Minas Gerais, Brazil. Grown at altitudes of 1000-1300 masl, only the ripest cherries are selected using a density sorter. These cherries are sun-dried on patios for three days before being finished in mechanical dryers. This careful process results in a medium roast with a cupping score of 83, boasting notes of caramel, milk chocolate, and brown spices. Made from 100% Arabica beans with no artificial flavoring, Samba Reserve offers a high-quality, flavorful brew perfect for any time of day.

Milk chocolate, apple, macadamia, toffee, medium body, low acidity natural process The Araponga region, nestled within Matas de Minas in Minas Gerais, Brazil, is renowned for producing exceptional specialty coffees. Surrounded by the Atlantic forest, this area benefits from diverse microclimates and high mountains, creating perfect conditions for coffee cultivation. The volcanic soils in Araponga are ideal for growing Yellow Icatu, Yellow Catuaí, and Red Catuaí varietals, which dominate the region's coffee yield. Meticulous farming practices, including careful crop management, planning, and post-harvest processing, contribute to the region's reputation for high-quality, award-winning beans. In this region, Red and Yellow Catuaí cherries are mechanically harvested, with ripe cherries separated from unripe ones through density sorting and electronic selection. Bensa, located in the Sidamo region approximately 450 km from Addis Ababa, is home to some of Ethiopia’s finest coffee farms. This particular lot features Variety 74158, a well-balanced coffee known for its smooth body, named by the Jimma Agriculture Research Center. The beans from various farmers in Bensa are sun-dried on raised beds, allowing for even drying over 10-14 days until they reach the perfect moisture level. We roast this coffee on the lighter side of medium to highlight its unique flavors and aromas. Ethiopia Bensa G2 boasts distinct notes of nectarine and black tea, complemented by a subtle toffee sweetness. Its smooth, oily texture is balanced with a juicy sweetness and acidity, providing a sweet and long-lasting finish. By enhancing agronomical and picking practices, and leveraging Inmaculada’s expertise, Fellows Farms helps local farmers meet specialty coffee standards and secure better prices. The project aims to showcase the farmers' efforts to international markets with full traceability. The farmers, including the Mujeres Caficultoras de Pescador Caldono Cauca AMCAPEC association, work across 60 hectares in Tambo, Piendamó, and Caldono. They use agroforestry techniques to protect their crops from adverse weather. Fellows Farms coffee is known for its clean profile, with citric and delicate tropical notes, sweet chocolate, raw sugar, and juicy acidity. Each lot is electronically sorted and accompanied by a detailed technical sheet, ensuring complete traceability and quality assurance.
