Caribbean Rice n' Peas

"Caribbean Rice n' Peas"
A quintessential one-pot side dish, most famously associated with Barbados, Guyana, Trinidad & Tobago. This is made with Black-Eyed Peas or Pigeon Peas, NOT the Jamaican version using red Kidney Beans.
Flavor Profile: It features a rich, creamy texture from coconut milk and a fragrant, savory aroma from a "quintet" of seasonings: Scotch bonnet pepper, fresh thyme, scallions, garlic, and allspice (pimento).
The Scotch Bonnet: A whole pepper is added to the pot but not cut or burst; it is meant to infuse the rice with a fruity aroma and "whisper of warmth" without making it spicy.
Cultural Significance: Traditionally served as part of a Sunday lunch, a custom dating back to the 18th century when Sunday was the only rest day for enslaved people.
