Briam (or briami) is a traditional Greek roasted vegetable dish often described as the "Greek cousin" to French ratatouille. It is a quintessential example of ladera cooking, a category of Greek dishes defined by vegetables being slow-cooked in a generous, "copious" amount of extra virgin olive oil until they are meltingly tender and caramelized. Eggplant, bell peppers, carrots, and or mushrooms are roasted in a sauce made from grated fresh tomatoes. We serve this over sweet potatoes.
