This cake was created for Slice, Slice Baby by +Santai, Singapore's first Cake Picnic-inspired event. I wanted to hop on the pistachio bandwagon, but did not want to step into the kunafa chocolate cake world that everyone seemed to love! There are plenty of talented bakers who have created fantastic renditions. I just don't think I can. So this is what I came up with!
This cake is a pistachio olive oil sponge, filled with dark cherry compote, layered and covered with tahini & caramelised white chocolate meringue buttercream.
