Tatume squash is a summer squash that's a staple in Mexican and Southwestern cooking. It's also known as calabacita squash or Mexican zucchini.
Appearance: Light green skin with spots, Round or oval in shape, and Similar in shape to zucchini.
Taste: Light flavor, Buttery, and Creamy texture.
Uses: Casseroles, Stews, and Stir-fried with other vegetables.
Preparation:
Rinse but don't peel
Leave whole, cut into slices, or dice
Boil, butter-steam, microwave, or stir-fry
Growing:
Thrives in heat
Grows well in fertile, well-drained soil with a pH of 6-7.0
Can grow vines up to 12 feet long
More drought tolerant than most squash
Harvesting:
Harvest when about the size of a baseball
Leave on the vine to mature to a diameter of six to eight inches and golden-yellow in color.
