Kocido

KOCIDO – as the name suggests – serves cocido, a traditional Spanish stew that is served all around Spain. Cocido is a nourishing dish tirelessly prepared with meat, vegetables and chickpeas where it is commonly served rustically as a staple main dish.    Kocido is an invitation to explore a new dimension of flavours. A chef in continuous development and revolutionary in his thoughts, Chef Jose focuses on giving traditional Spanish dishes an elevated twist and contemporary interpretation.    Kocido features 5 cocidos, each re-interpreted with East Asian influences that diners here find comfort in. The broth is made from pork, chicken, and beef to extract their collagen and flavours; and contrasted with vegetables and most importantly chickpeas to bring an earthy balance to the taste buds and a satisfying fill to the stomachs.
