Chicken Perattal. Consists of chicken marinated in goodness yogurt, turmeric and a paste of red chillies, kalpasi, coconut, poppy seeds, coriander seeds, cumin seeds, fennel seeds, black pepper, ground nuts, onions, garlic and sesame oil. It is served hot and garnished with coriander leaves.
Chicken Varuval. Marinade the cut chicken for at least one hour with ground turmeric, salt and meat curry powder. Heat the vegetable oil, and fry the dry chilli, green chilli, and half of the curry leaves over low heat. Add the chopped onion, ginger and garlic and fry. Add the chopped tomato, the ground herbs and chicken.
