We hand-sieve fresh yam into a smooth and fine paste — no artificial ingredients and colouring. We use olive oil and house-rendered lard — no hydrogenated oil or shortening. The crust is made with lard — in a flaky style and relatively thin — which gives a hint of lard aroma and has a crispy texture when toasted.
