The minimum shiur for karpas is less than a kezayis
(less than approximately 1 oz / 28g).
A small piece is sufficient. Many hold that even a bite-sized amount fulfills the requirement.
Since the mitzvah is about dipping and not eating a specific quantity, there is no strict minimum shiur like there is for maror.
Most people use a short celery stalk or a small piece of the stalk.
