It's used in the same way as beef but veal is much more mildly flavoured and more tender. Season the meat with herbs, pepper, and salt to your desired taste, and place it in a roasting pan. If you are cooking a rack of veal, keep your meat moist by coating it with olive oil. You may also try out duck fat, or butter as an alternative to olive oil for a veal roast

White Pepper's clean, pine flavour and mellowed pepper bite make it wonderfully suited for veal. Basil has a fresh, liquorice-meets-pepper flavour that goes beautifully with delicate veal. Add at the end of cooking time because basil loses flavour very quickly when it's exposed to heat.
