The Oyster Blade is connected to the shoulder blade of the beef, created by cutting directly across the top of the Blade muscle located in the flavorful Chuck (shoulder) primal. This long respected and beloved beef cut is a well-worked muscle therefore full of rich beefy flavour.
We recommend removing all packaging and allowing it to breathe for 10 minutes. Oil and season the surface of the meat and sear all over in a hot frying pan, before transferring it to a roasting tray and placing it in the oven. 180°C, Fan 160°C, Gas 4. Rare 20 MINS per 500g +20 MINS.
