A kimoto sake with a 90% rice polishing ratio, made with Gunma Prefecture's sake rice and wild yeast!
The scent is a yoghurt-type lactic acid scent. It has a strong, sour taste that is unique to kimoto-zukuri, and has a good balance of sweetness and umami. It also leaves a pleasant aftertaste.
The rice polishing ratio of 90% creates a finished sake with a similar taste to aged sake.
Chilled, normal temperature, hot sake, everything is good!
