IVR USDA Prime Natural Beef is American beef at the top of the grading scale. USDA Prime is awarded to only a small fraction of US beef, given for the abundant marbling that comes from young, well fed cattle.
Hanging Tender is the cut butchers traditionally kept for themselves, with only one per animal. Its loose, open grain soaks up marinade and delivers a deep, almost mineral beefiness you will not find in a loin steak.
Best for: grilling and pan-searing to medium rare.
