IVR USDA Prime Natural Beef is American beef at the top of the grading scale. USDA Prime is awarded to only a small fraction of US beef, given for the abundant marbling that comes from young, well fed cattle.
Outside Skirt is the more prized of the two skirt cuts, thicker and more tender than inside skirt. Its loose, open grain gives an intense, concentrated beef flavour and makes it exceptional at absorbing marinade.
Best for: fajitas, carne asada and high-heat grilling.
