IVR USDA Prime Natural Beef is American beef at the top of the grading scale. USDA Prime is awarded to only a small fraction of US beef, given for the abundant marbling that comes from young, well fed cattle.
Top Blade comes from the shoulder and is second only to tenderloin in tenderness, but carries far more flavour. Because it works less hard than other shoulder cuts, it stays remarkably soft.
Best for: grilling, pan-searing and slicing against the grain.
