From Gochang in North Jeolla Province, on Korea's west coast — a region where the tidal flats and clean spring water have made eel farming a local craft for generations. Gochang eel is prized in Korea for its thick, fatty flesh and clean taste.
Each eel is filleted whole, deboned and vacuum-sealed frozen, so the natural oils and delicate texture are held exactly as they were.
