Marrunga Marble is a premium Australian lamb from New South Wales, grain-fed for at least 90 days on a program modelled on leading Wagyu regimes to develop fine threads of intramuscular marbling. The result is a luxurious texture and a milder, sweeter lamb flavour - fittingly, Marrunga means 'sweet' in the Wiradjuri language.
Roasting brings out the best in this cut. It also slow-roasts beautifully until pull-apart tender.
