Classic chocolate cake

I learned to bake this classic chocolate cake with dark chocolate ganache in 2018 when I attended a baking workshop. I have long since tweaked the recipe to have less sugar and use a blend of flours to make it a softer moist cake—plus a bonus recipe for the filling which is the caramel (caramelized milks instead of the caramelized sugar with cream & butter).
