About Sudaki-tou Sugar:
Sudaki-tou (すだきとう) is a Japanese brown sugar produced from 100% sugarcane grown in the Amami Islands.
It has a distinctive caramelised flavour with subtle mineral notes and a gentle savoury finish. Carefully heated to achieve its pale amber hue, sudaki-tou offers a smoother, more rounded sweetness compared to refined white sugar while retaining naturally occurring minerals from the sugarcane.
We especially love it for its gentle sweetness, which complements the nutty richness of browned butter without overwhelming the flavour of the financiers.
