Cánh Cam Collection - Catimor Natural Anaerobic
There are many differing opinions on the classification of Catimor coffee. As a hybrid of Caturra (an Arabica variety) and Timor (a natural hybrid of Arabica and Robusta), it is difficult to categorize it strictly as either Arabica or Robusta. Introduced to Vietnam in the late 1980s, Catimor has maintained its position due to its high yield and strong resistance to pests and diseases. Today, it remains the dominant variety in Vietnam’s Arabica-growing regions.
At Cánh Cam Garden, we use anaerobic fermentation to maximize sweetness and develop more complex flavor layers compared to traditional washed or natural processing methods.
