MILD SOUR LOAF (S.D)

MILD SOUR is stone-baked loaf that is light in both flavour and texture. Others might call this Pain au Levain or Country Bread. By design, it is “simple” yet versatile; it can support other food or be a satisfying meal unto itself. Sublime when toasted/browned. This is the default bread served at our Toast Bar. Made with classic French technique and French flours (but not French labour). Cc Ian Lowe. 1400g before baking. Store in a airtight container or ziplock.

Perceived sourness 2/5. Leavened with sourdough and nothing else! Crusty, unenriched (lean), unsweetened and vegan.
