Made with 350g of ripe bananas and 120g of handcrafted caramelised pecans, folded through a rich buttery batter leavened with Joy, Helen's sourdough starter, for an exceptionally moist, flavourful loaf. Every bite carries deep banana sweetness balanced against pockets of caramelised crunch, with a faint sourdough tang running underneath it all.
Best sliced thick, toasted lightly, and eaten with good salted butter. Helen's choice: Échiré.
