This cake was first made for a relative who cannot take dairy. But I didn’t put it on the menu last year because I had yet not perfected it and didn’t quite find it firm enough without using agar agar.
Finally it was perfected late last year for our church monthly Elderly Fellowship birthday celebrations. I was told that the elderly folks didn’t like cream cakes and would usually buy the bengawan Solo Pandan Kaya Cake. Now this fresh Pandan Kaya Cake is the perfect dessert that is also keto friendly!
Two layers of soft pandan chiffon cake with real homemade Kaya inside (not using agar agar) and all around and not too sweet!
