These are six good years in the making. In part also because I have too many things to try out ๐
I made a lot of non-keto muffins pre-keto days. And I can only say not all keto muffins are created equal. It was sorely disappointing that not one keto recipe out there taste like a non-keto muffin in flavor, texture and density.
As covid travel restrictions ease, I find the need to have a few more food options that do not require refrigeration so I can bring around (aka on the plane and check in luggage) to consume while overseas๐
