Orecchiette
Aka "Little ears" — pressed one at a time, by hand, the way they've been made for generations in Puglia. Each cup is shaped to hold sauce. Made fresh in small batches with semola rimacinata, water, and a little olive oil.
TO COOK
Bring a pot of well-salted water to a rolling boil. Add pasta and cook until floating, about 3–4 minutes, or to your preference. Toss with your sauce of choice. For frozen pasta, cook straight from frozen, adding about 2 minutes.
PAIRS WELL WITH
Anything its unique shape can hold — rich tomato ragù, vibrant pesto, or a classic combination of crumbled sausage and broccoli.
INGREDIENTS
Semola rimacinata (durum wheat), water, extra virgin olive oil.
CONTAINS
Gluten. Made in a kitchen handling egg, dairy, and nuts.
STORAGE
Fresh: Keep refrigerated in packaging. Consume within 3 days of purchase. Do not refreeze.
Frozen: Keep frozen until ready to cook.
