Yellowfin tuna (Thunnus albacares), also known as ahi tuna, is a popular species of tuna prized for its firm texture and rich, mild flavor. Yellowfin tuna is widely used in both raw preparations, like sushi and sashimi, and in cooked dishes due to its versatility and delicious taste. It is commonly found in tropical and subtropical waters around the world.

Seared Yellowfin Tuna with Sesame Crust

Ingredients:
- 4 Yellowfin tuna steaks (about 6 oz each)
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon fresh lime juice
- 2 teaspoons honey
- 1-inch piece of ginger, grated
- 2 cloves garlic, minced
- 1/2 cup sesame seeds (white and black mixed, if possible)
- 2 tablespoons vegetable oil
- Fresh cilantro or green onions for garnish
- Lime wedges for serving

Instructions:
1. Marinate the Tuna:
- In a bowl, combine soy sauce, rice vinegar, sesame oil, lime juice, honey, grated ginger, and minced garlic. Mix well.
- Place the tuna steaks in a shallow dish or resealable plastic bag. Pour the marinade over the tuna, ensuring it is well coated. Marinate in the refrigerator for at least 30 minutes, preferably 1 hour.

2. Prepare the Sesame Crust:
- Spread the sesame seeds on a plate. Remove the tuna steaks from the marinade, allowing any excess to drip off.
- Press each tuna steak into the sesame seeds, coating both sides evenly.

3. Heat the Pan:
- Heat the vegetable oil in a large skillet or cast-iron pan over medium-high heat.

4. Sear the Tuna:
- Once the oil is hot, add the sesame-crusted tuna steaks to the pan.
- Sear the tuna for about 1-2 minutes per side for rare to medium-rare, or longer if you prefer your tuna more cooked. The sesame seeds should be golden brown, and the tuna should have a nice crust while remaining pink in the center.

5. Serve:
- Transfer the seared tuna steaks to a cutting board. Let rest for a minute, then slice into thin pieces.
- Garnish with fresh cilantro or green onions.
- Serve immediately with lime wedges and your choice of side dishes.
