Kara Boondhi is one of the best-known South Indian snacks — small, spherical chickpea flour balls fried golden and tossed with spices. "Kara" means spicy in Tamil, which describes this snack precisely: peppery, aromatic, with a direct heat from chilli powder, curry leaves, and pepper. Kara Boondhi is a core component of classic Bombay Mixture and many other South Indian snack mixes, but it stands equally well on its own.
