Thattai is one of the oldest snack specialities from Tamil Nadu — a fried rice cracker that is thin, round, and deeply crunchy with a texture unlike any western cracker. The dough is made from rice flour, urad dal, sesame seeds, and Bengal cherry peas, seasoned with red chilli and asafoetida, then pressed flat and deep-fried until it achieves its characteristic rigid snap. Moderately spiced, crisp, and satisfying, Thattai works equally as a standalone snack or alongside chutneys and dips.
