The Farm
COOPCHEBI is a farmer-led cooperative founded in 2003 in San Luis de Shuaro, Chanchamayo, Junín, Peru. Since 2007, it has operated as an open cooperative, growing steadily with 150 smallholder members cultivating diverse coffee varieties in forested areas at 1200–1850 meters altitude, while respecting nature and the environment. Though Gesha variety originated in Ethiopia, it gained its popularity by Latin America farmers who grow it well. Gesha’s inherent characters are intense floral aroma, bright acidity, and high sweetness. Now, it’s one of the highly-prized coffees in the market. 
The Process
This particular Gesha lot went through a Yellow Honey process. That means, the beans were dried under a layer of thin mucillage. This results in a coffee that has a strong floral 💐 aroma, with malt and caramel sweetness. When it cools down, you’ll taste more red grape 🍇 and tropical fruits 🥭 notes.
