For Kiriotoshi, we will prepare a mixture of 2–3 different parts, typically selected from Chuckroll, Clod, Short Rib, Top Round, Outside, and Knuckle.
In Japan, kiriotoshi can refer to a type of cutting, generally understood as “thinly cut”. Our Kiriotoshi is not off-cuts—it is purposely cut for this product. Dotzu Original Kiriotoshi is intentionally crafted by combining parts, so customers can enjoy a balanced assortment and experience different wagyu flavours in one pack.
Kiriotoshi is recommended for stir fry, Gydon bowl, (some enjoys as Shabu Shabu and sukiyaki)
