I prefer and like my bagels without the "tang". Using sourdough as the based, a tiny bit of commercial yeast is added to prevent the sour taste. Freshly milled flour are added for a healthy boost. And they still go through overnight fermentation process for the added flavor and nutritional benefits.

Bagels keep well in room temperature for up to 2 days or freezer for a month. Lightly toast in the oven for 3-5mins before serving.
