Tasting Notes: A delightful harmony of fresh citrus, herbs and Cape gooseberries, with tropical notes of kiwi and guava complemented by subtle wood nuances. The wine's complexity, developed during its 100-day maturation on the lees, delivers a balanced and memorable experience with ideal acidity.

Body: Full (13.5% ABV)

Food Pairings: Goat cheese soufflé, summer salad of heirloom tomato with cling peaches and burrata, or roasted butternut with fennel and fried sage.

Winemaker Notes: Harvested by hand from 35-year-old vines, these quality grapes are transported to the cellar in dry ice to protect their flavours. After 24 hours on the skins, the juice undergoes a freezing process to concentrate its essence. Fermentation in both French oak and stainless steel, followed by 100 days of lees maturation, creates a sophisticated profile that will continue to develop for up to three years after bottling.
