Traditional jaggery can naturally vary between batches in colour, shape, hardness, surface appearance and texture. A light powdery or crystalline layer may sometimes appear on the surface of jaggery pieces. Natural variation of this kind is normal for traditionally prepared jaggery. Because jaggery can absorb moisture, the container should be kept tightly sealed after opening.
