The owners refused to abandon the time-honoured, traditional
wood-fired roasting method. This allows the meats to retain many
of the natural compounds by preserving more of the flavours.
The smoke imparts a distinct flavour to the meats. The change in flavour
characteristics are very subtle, providing more of a particular imprint, rather than an altered profile. This is what we would describe as a gentle whisper of aromatic smokey infusion. The surface of our roasts are rich and well-browned with a crisp fat or skin yet the meat remains tender & succulent retaining
maximum juiciness.
