In the glass, this natural Chardonnay is fresh and lifted — pear, green apple, lemon peel, with subtle white flowers and a gentle nutty edge. There's a quiet richness from the lees, but it stays clean, dry, and precise.
Chardoc is François de Nicolay’s low-intervention take on Chardonnay: organically grown fruit, native yeast fermentation, and aging in old oak barrels that bring texture without the gloss. It’s unfiltered, unsulfured, and effortlessly alive.
