Clean, crisp, and quietly confident — Louis Sipp’s Sylvaner Bio’s shows just how good this often-overlooked grape can be. Grown organically on 30+ year-old vines around Ribeauvillé, the wine reflects Alsace’s mosaic of soils: limestone, clay, and sandy marl.
It’s fermented with native yeasts and aged for 7 to 8 months on fine lees in stainless steel, keeping everything bright and focused. No oak, no tricks — just layers of citrus, freshly cut grass and soft white flowers. Dry and lively, with a gentle roundness and a salty snap on the finish.
