Expect lifted aromas of apricot, ripe citrus, white flowers, and a touch of honey. It’s gently fizzy, bone dry, and super fresh, with a rounded mid-palate and bright mineral finish. Unfiltered and unfussy.
François de Nicolay is a Burgundy négociant rooted in Savigny-lès-Beaune since 1834.
For Bulles Dog, he works with organic Aligoté vines averaging 30 years old, staying true to a minimal-touch approach.
Fermentation kicks off with indigenous yeasts, followed by 8 months in stainless steel. The wine is bottled while still fermenting, using the ancestral method — no disgorgement, no added sulfur, just raw, honest pét-nat energy.
